Master Mix: Chocolate or Vanilla Pudding Mix

Have you read the ingredients on the back of those little boxes of pudding? Can you even pronounce all the names of the ingredients?  Did you know that you already have the ingredients to make your own mix? Save money and control the ingredients? What could be better?

This pudding mix is a cook pudding, but only takes a few minutes to prepare, and is warm, creamy and delicious!

Let me try to answer a few questions you may have:
1) Sugar free?  You can use a sugar substitute as long as it is the kind that measures out the same as sugar. I have no experience with more concentrated kinds in a large recipe like this.
2) Instant? I have never made an instant mix, but knowing some of you may ask, (and have NO luck finding one!) I could not find one online, but have heard of some people trying to make it using Instant Clear Gel. (Make sure it is the Instant Clear Gel). but I have no recipe or experience to guide you.

Now, onto the recipes!

Chocolate Pudding Mix

Ingredients for mix:
1 1 /2 cups plus 2 tablespoons of unsweetened cocoa powder
3 1/4 cups granulated sugar
1 1/3 cups cornstarch
1/2 teaspoon salt

Directions:
Mix all in ingredients together in a large bowl. Pour into a 6 cup container with an air tight lid. Label and date your mix. Use mix within 3-4 months. Makes 6 cups of mix.

Now here's how to make that pudding!

Chocolate Pudding:
1 cup of pudding mix
2 3/4 cups milk
2 tablespoons butter or margarine
1 1/3 teaspoons vanilla extract

In a saucepan, combine pudding mix and milk. Cook and stir over med. heat until mixture thickens. Remove from heat and stir in the butter and vanilla. Pour into serving bowls.




Vanilla Pudding Mix:
Ingredients
2 1/3 cup granulated sugar
1 3/4 cup cornstarch
3/4 teaspoon salt.
Mix and store in airtight container. Makes 4 cups.

To make pudding:
2 /3 cup pudding mix
2 3/4 cups milk or half and half
2 egg yolks (optional but makes a rich custard)
2 tablespoons butter or margarine
1 1/2 teaspoon vanilla

Beat egg yolks in a small bowl and set aside.  In a saucepan, combine pudding mix and milk or half and half. Cook and stir over med. heat until mixture thickens and begins to bubble. Stirring vigorously pour about half the hot pudding into the bowl with the beaten egg yolks. Now stir this egg yolk mixture back into the pan of remaining pudding.  Cook and stir another 1 minute longer.  Remove from heat, stir in butter or margarine and vanilla till blended. Pour into serving dishes. Cover and refrigerate 1 hour. (although I just dive in while it's warm!)
