Freezer Meals: Ham-n-Cheese Quiche
Quiche is a great "go to" meal for a light dinner or a breakfast or brunch. Plus, this easy to throw together freezer meal is very adaptable to change! I love to consider it a "base" recipe for making quiche and mixing together what I have on hand for flavors. It's the perfect freezer meal because you can literally pull it from the freezer and bake it without thawing if you want to!
This recipe makes 2 quiche, perfect to bake one for dinner right away and wrap the other in the freezer for another meal, or if hosting a gathering you can make these ahead and pull them out to bake, making for one less thing to worry about on the day of the event.

Freezer Meal: Ham-n-Cheese Quiche:
Ingredients:
2 pie crusts
2 cups diced, fully cooked ham
2 cups shredded cheese (1/2 cup set aside) such as : Cheddar or Swiss
6 eggs
2 Tablespoons minced green onion
2 cups of your choice /combination of one of the following: milk, half-n-half, light cream, or evaporated milk
Directions:
If using frozen, rolled up pie crusts, thaw, and unroll into a lightly greased freezer safe pie plate (aluminum or pyrex), set aside.
In mixing bowl beat eggs and milk till well blended. Mix in ham, green onions, and 1 1/2 cups of cheese. mix gently till well blended.
Divide egg mixture evenly between the two prepared pie crusts.
sprinkle remaining cheese on top of the pies (1/4 cup each pie).
To bake from thawed or right away for dinner, wrap edges of pie crust in foil to prevent over browning and place on a cookie sheet to prevent spillovers at 375 degrees for 30-40 minutes till eggs test done. (Baking from frozen will require 50-60 minutes usually)
To freeze quiche, wrap a layer of plastic wrap and then in a layer of foil. Label and freeze up to 3 months. Jan's tip: The plastic wrap prevents the foil from freezing to the quiche.
To bake from frozen, uncover both foil and plastic wrap. Tear foil into strips and wrap edges of pie crust in foil to prevent over browning. Bake at 375 degrees for 50-60 minutes or till eggs test done.
Need to freeze in a small space? Make it a Quiche in a Bag! divide the egg mixture evenly between two freezer bags and label and freeze for up to 3 months. To make quiche, thaw egg mixture in refrigerator approx. 8 hours before baking. prepare pie crusts in pan and pour quiche into unbaked pie crust. Follow directions for baking from thawed above.
