Make Your Own: Jiffy Cornbread Mix
5 minutes of work will get you a cheaper, yummy version of this convenience mix, and you get to control the ingredients and the cost! Make a few batches at once to store in your pantry or freezer for the rest of the fall and winter!
I have found that the convenience mixes in the store are getting more and more expensive. I have been using this recipe that I found in a family cookbook for several years.
Let's get started:
Mix in a airtight storage bag:
Cornbread Mix:
2/3 cup Flour
1/2 cup cornmeal
3 Tablespoons sugar or sugar substitute
1 Tablespoon baking powder
1/4 teaspoon salt.
Label and store in pantry or freezer.
To Bake Mix:
In mixing bowl mix cornbread mix with:
1 egg
1/3 Cup Milk
2 Tablespoons of oil
Bake 400 degrees for 15-20 minutes
