Freezer Meals: Frozen French Fries






Absolutely NEVER buy another bag of frozen french fries again! It is super easy to make your own bags of french fries, you can control the amount of fat and oil that the fries are prepared in, and you know where and how the potatoes were grown.

Right now it is a few weeks before Thanksgiving and bags of potatoes and sweet potatoes (have you seen the price of sweet potato fries in the store?) are on sale. Even though this is a busy time of year, it's the best time to be thrifty and take advantage of the sales.

Jan's tip: You may find it easier to buy a french fry cutter. They run about 15 dollars and are a good investment if you plan on making these on a regular basis. I just used a knife and cut down about 15 potatoes in less than 10 minutes.

Frozen French Fries

Ingredients:
potatoes
olive oil
seasonings if desired

Directions:

Preheat oven to 425 degrees
Peel potatoes (if you must, I detest peeling them, so I leave the skins on!) and cut into desired shapes
(wedges, shoestring, etc).









Place the cut potatoes in a large bowl of ice water while you work. (Keeps them from turning brown.)









Drain potatoes and lay on single layer on baking pans.

Drizzle fries with olive oil, season with any desired seasonings.  Gently toss fries to coat. (You can throw them all in a bowl or bag and shake them if you'd prefer).









Cook fries till just done. (Your not going for brown and crispy here, just cook the potatoes through)











Place pans of fries directly in the freezer so that the fries flash freeze individually in a single layer.
Jan's Tip: Don't try to move or jostle them too much, they will break apart. 

When fries are frozen, remove pans from freezer and place fries in ziplock bags or airtight containers in the freezer. (You may need to use a spatula to pop some of them off the pan.)
Make Your Own Frozen French Fries
These 2 gallon bags of fries came from 15 average sized potatoes

TO COOK FROZEN FRIES:
Preheat oven to 425 degrees
Pull out desired amount of frozen fries and place them  onto lightly greased cookie sheet, and bake till desired crispiness. Approx. 15 min.
(Or you can deep fry them if you prefer).
DO NOT THAW FRIES FIRST.
