Freezer Meal: Burritos

Making your own stash of burritos for the freezer only takes a few minutes. You can have a much healthier version than the store bought, save money, and still enjoy the quick microwave meal when you are on a busy schedule. I make them in bulk for my college aged kids to store in their freezer for quick easy meals.
  



Jan's Tip: Ingredients can vary as well as amounts of each ingredient to your own preferences. The recipe below is a general guideline to get you started.  I used press and seal plastic wrap since it seals the burrito nicely but is also microwaveable. makes reheating so easy. But you can use plastic wrap, or an airtight container of any kind)
Freezer Beef & Bean Burritos
Makes approx. 8
Ingredients:
1 pkg. large burrito sized flour tortillas
1 lb. hamburger meat seasoned with taco seasoning.
32 oz. can or homemade refried beans
8 oz. pkg. shredded cheese
Directions:
Cook hamburger, drain grease, and season with taco seasoning. Set aside to cool.
Open refried beans or thaw homemade frozen refried beans
On each tortilla place approx. 1/4 cup refried beans.
Spread out into a log shape, leaving several inches of space from edge of tortilla
Spread approx. 1/8 cup of taco meat on top of beans
Sprinkle top of beans with several tablespoons of cheese (more or less to your own taste)
Fold in both sides of the tortilla
Fold up the bottom of the tortilla over bean mixture
Fold up the top of the tortilla  OR flip the wrapped portion over to completely wrap the burrito.
Wrap each burrito in air tight wrap.


Freeze.
I store mine in the empty tortilla bag,
Use within 2 months.
To reheat: if using a microwave safe wrap, open one end of the wrap  and microwave 1-2 minutes (Times vary by microwave) till burrito is heated through.
