Monterey Chicken

Monterey Chicken is a delicious twist on barbecue chicken. It has the traditional barbecue sauce layer, then topped with crispy bacon, then melty cheese, for a delicious dinner, your family will ask you to make over and over again. It's also great for having company over.

 I found it many many years ago in a magazine. (I think it was Woman's Day). I cut the recipe out, tried it and it became a family favorite that I have been making ever since.


I usually bake the chicken in the oven, but you can cook it on the grill if you'd like to. I almost always serve it with Bacon Ranch Potato Salad. Since I have to cook bacon for both, they just seem to go together.


Monterey Chicken
serves 4-6


Ingredients:
 4-6 Boneless, skinless chicken breasts (one per person)
1 1/2 cups barbecue sauce (grab your favorite brand)
8-12 thick sliced bacon  or turkey bacon cooked crispy (2 per chicken breast)
1 cup shredded cheese (Cheddar, Colby/jack or even pepper jack )
Optional: Diced tomato and green onions


Directions:

Preheat oven to 350 °
Place  chicken breasts on baking sheet
brush tops of chicken with barbecue sauce.
Bake 15-20 min. till chicken is cooked through.
Pull baking sheet from oven.
Place 2 slices of crispy bacon on top of each chicken breast.
Sprinkle cheese on top of the bacon layer.
Return baking sheet to oven and bake 5 min. till cheese is melty.
Remove from oven.
Top with diced tomatoes and green onions.

Serve Warm.
