Quick Ice Cream Cake



This easy and quick dessert is perfect for those summer cookouts and parties where you want a fun dessert that looks like you spent alot of  time but you really didnt'.

I keep one of these in my freezer during the summer so I am ready to grab and go at the last minute when company or family comes over unexpectedly.

If you follow my blog, you know that my custom made ice cream cakes are highly requested for birthdays. This one today is a quick and easy variation that I make as well.

Jan's Tip: Since Ice Cream sandwiches play the starring role, have fun and mix up some of the great flavors they come in now. I am using cookies and cream ones today, but mint, neopolitan among others make a great choice also!

Quick Ice Cream Cake
Ingredients:
2 boxes of ice cream sandwiches
2 (12 oz) jars  hot fudge sauce
1 (8 0z) container whip topping.
9x13 pan (grab the deepest one you have)

Directions:
open and unwrap one box of the ice cream sandwiches.
Layer ice cream sandwiches in bottom of 9x13 pan, cutting some in half if needed to fill pan.
Spread one jar of the fudge topping (do NOT heat it up first!) on top of the ice cream sandwiches.
Open, unwrap and layer 2nd box of ice cream sandwiches on top of the fudge layer.
Spread 2nd jar of the fudge topping on top of ice cream sandwiches.
Spread whip topping on top.
Cover tightly and freeze till serving.

To serve:
Pull out of freezer approx. 5 minutes before you wish to serve it, to thaw slightly.
Cut into squares and serve immedicately.
