Hash Brown Casserole, Funeral Potatoes whatever name you call it by it is loved by many. Mine is not a new recipe and you can find it anywhere, but since part of the reason I blog is for my own family, I am posting it so it will live on in future generations!
Lets get cooking!

Hash Brown Casserole
Ingredients:
4 cups shredded cooked potatoes (can use a bag of frozen)
1 can cream of chicken soup
2 cups sour cream
2 cups shredded cheddar cheese
optional toppings:
1 cup shredded cheese
or
2 cups crushed cornflakes wixed with 2 Tablespoons melted butter
Directions:
Shred cooked potatoes
mix in soup, sour cream and cheese
Spread into 9x13 pan or casserole dish.
Topping options:
top either with cheese or buttery cornflake crumbs.
I am using cornflake crumbs (dear hubby loves it that way)
Bake at 325° for 45 minutes till hot and bubbly.
Serve Warm.
