Featherweight Pancakes

Homemade Pancakes.. worth the extra minute!
Pancake Mixes today are so instant and easy, but our children have rarely or never had them truly like they used to be when our grandmothers made them! It only takes an extra moment or two to make your own from scratch and this recipe is my grandmothers. My cousins and myself make them all the time for our families and the recipe holds tried and true, light and fluffy!

Featherweight Pancakes

Ingredients:
2 Cups sifted flour
3 Tablespoons sugar
3/4 teaspoon salt
1/4 Cup vinegar
1 teaspoon baking soda
1/4 Cup Shortening
2 eggs, well beaten
1 3/4 Cup milk.

Directions:
In mixing bowl, sift/mix together flour, soda, sugar and salt
In separate bowl comgine eggs, vinegar, milk and shortening.
Add dry ingredients and stir only enough till smooth. Do NOT overmix. (Gentle is the key to the fluffy)
Pour onto hot griddle and turn once.
