Sugar Free Too! I love that this homemade scoop of love, can be made sugar free as well. My husband is a type 1 (juvenile) diabetic, and think about treating a loved one to a homemade sugar free treat, that did not come from a store! Believe me, they will love it and you for doing it! just substitute a sugar free sweeter that measures out equal to sugar.
Jan's Tip: The batter on this pudding will be thick like brownie batter when you pour into your pan to bake, but after it bakes, once you sink your spoon into it; it comes out as a delicious creamy pudding! If you want a crispy crunch sweet topping, sprinkle a teaspoon of sugar across the top before baking.
Don't have self rising flour? No worries: you can easily make your own self rising flour!
Old Fashioned Baked Chocolate Pudding:
Ingredients:
1/2 cup cocoa powder
1 1/2 cups sugar or sugar substitute for baking
2 cups self rising flour
2 sticks butter melted
4 cups boiling water
optional: 1/2 chopped walnuts
Directions:
Preheat oven to 400 °
In a large bowl: mix together cocoa and sugar
Add flour and mash out any lumps.
Add melted butter and boiling water, and mix well. Batter will be thick.
Pour into a 10x10 inch square baking dish.
Sprinkle with sugar if you want a crispy topping
Bake for 30 minutes.
Serve warm.
