Today I'm not only sharing an easy recipe with just a few simple ingredients that can be thrown into an electric or hand crank mixer and in no time you'll have a delicious classic recipe ready to eat or "play" with.. Like I am today!
Sneak Peak: Today my daughter and I are turning this classic vanilla wonderfullness into Ice Cream Sandwiches for the Fourth of July. She made her famous super soft and moist cookies that she makes with either chocolate chips or M and M's. These things are literally the worlds most moist, softest cookies ever and she has also shared with me her secret cookie baking tips. I will be sharing this recipe and the tips with you during cookie week later this year so stay tuned!!!
Jan's Tips: To make the ice cream sandwiches make sure your ice cream is nice and and hard. So in the directions, it has you freeze the ice cream for a few hours, test it and make sure it's not "soupy".
Also make sure you are ready to assemble ,wrap and refreeze before removing the ice cream from the freezer. I wrap mine in foil to make it fast and easy to wrap and unwrap, as well as to recycle, but plastic wrap also works it just get's to "finicky" for me during wrapping time and I'm in a hurry.
Sandwich Options: You can use a variety of "sandwich" options. Homemade cookies is a perfect option, but so is brownies! (Think mint chocolate chip or Oreo Ice Cream fillings), or Chocolate graham crackers also makes a great sandwich! An Amish Shop in the mountains above Charlottesville Virginia sells Ice Cream Sandwich wafers by an entire sleeve full. Let's just say they were my children's favorite growing up!
Feed a Crowd:Want to feed a crowd? Bake a chocolate cake in a 9 x 13 pan. Remove from pan, slice in half the long way so you now have 2 thin 9 x 13 cakes.Place bottom layer back into pan. spread ice cream on bottom half. top with top layer of cake. Cover cake with foil and freeze till serving time. Slice into sandwiches and serve!

Homemade Vanilla Ice Cream
ingredients:
- 1 1/2 Cups whole milk
- 1 1/8 cups sugar
- 3 cups heavy cream
- 1 1/3 Tablespoons pure vanilla extract
instructions
- In medium mixing bowl, use hand mixer on low speed, mix milk and sugar till sugar is dissolved about 1-2 minutes.
- Stir in heavy cream and vanilla.
- Turn on Ice Cream machine, Pour mixture into freezer bowl and follow instructions from your machine until done.
- Pour into freezer container, and place in freezer for approximately 2 hours.
