Slow Cooker Beef Minestrone

Slow Cooker Beef Minestrone is a perfect fall soup to throw together for dinner as you dash out the door, and is so hearty and filling! Will warm you up on a chilly evening! It freezes well also, so perfect to pack away for another meal!

This one needs just 20 minutes once your home to stir in the pasta to finish cooking,but while you're doing that, pop some biscuits in the oven, and go put on some warm, cozy jammies and slippers. By the time you get back, dinner is ready!

I love freezing the extra, but my hubby ends up taking it in small containers for lunch alot, so I'm lucky if I get to pack the extra away!

Slow Cooker Beef Minestrone
Ingredients
  • 1 lb. Hamburger, cooked & crumbled
  • 1 medium onion, diced
  • 1 Cup peeled diced Carrot
  • 1 Cup chopped/ diced zuchinni
  • 2 celery ribs diced small
  • 4 cups beef broth
  • 1 can (28 oz) Crushed Italian Style Tomatoes
  • 1 1/2 teaspoons Italian Seasoning
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 2 cans cannelini Beans or 1can cannelini and 1 can kidney beans all rinsed & drained
  • 1 cup Pasta : (Ditalini, elbow or shells) uncooked
  • 1/2 cup Grated Parmesan cheese
Instructions
Add all ingredients EXCEPT the beans, pasta, and cheese (save those for the end). into a slow cooker. Stir to combine.Cook on high for 3-4 hours or low 5-7 hours.After this initial cooking time is done, add in the beans, pasta, and grated cheese. Replace the lid back on the slow cooker and cook an additional 20 minutes until pasta is cooked through. Serve Warm
Yield: 8-10 Servings
