Freezer Meals: Grab-n- Go Breakfast Burritos

Right now my family is in the grab and dash era.  Between college, early morning seminary and an even earlier morning paper route in addition to full time jobs, being able to grab something more than a pop-tart is critical in the morning. I always need quick breakfast ideas and I love to make freezer meals, so   I wondered why in the world I had never stocked the freezer before with these yummy eat on the way burritos.

The nice thing is they are SO quick and easy to prepare.  You can make any kind of variation depending on taste preferences and what leftovers or produce you need to use up.  So use these directions as a guideline but feel free to use your imagination.



Breakfast Burritos : 

INGREDIENTS:

DIRECTIONS:

  1. 1 lb. ground sausage
  2. 2 small onions
  3. extra veggies – like peppers – {optional}
  4. 9 eggs
  5. 1/2 c. milk
  6. salt and pepper to taste
  7. 12-15  8″ soft tortillas
  8. 1 c. shredded cheese
  9. 1 c. salsa {optional}
  1. Brown sausage, onions, and any other veggies until meat is no longer pink — drain and transfer to a bowl
  1. Wisk together eggs, milk, salt, and pepper and cook eggs in the same pan that you cooked the sausage
  1. Continue cooking and “scrambling” eggs until no longer runny
  1. Assemble according to directions below
Assembly:
  1. Scoop a spoonful of meat onto the tortilla
  1. Scoop another spoonful of egg on top of the meat
  1. Sprinkle with shredded cheese
  1. You can also put 1 T. of salsa in each tortilla or just dip them in salsa when it’s time to eat
  1. Wrap them in aluminum foil or plastic wrap and place in the freezer
  1. To reheat, simply remove wrapping and microwave in high for 1-2 minutes
