Chicken and Stuffing Casserole is not only one of my families only favorite casseroles, I find it the perfect meal to assemble in smaller quantities for serving one or two people. If you are someone who packages up meals for an elderly parent, this one is perfect. Everything is precooked, so storing in the freezer and then just reheating is all they need to do for a warm and comforting meal.
It is super easy to make using a precooked rotisserie chicken or leftover Turkey from a holiday meal. In fact when turkey's go on sale for Thanksgiving, I recommend buying an extra one, cooking it down and using the meat from it for meals such as this for either your own freezer meals or for making for someone in need.
Jan's Tip: I love using leftover gravy, green beans, stuffing , and turkey after Thanksgiving, but using a store bought rotisserie chicken, cream of chicken soup, a can of green beans and a box of store bought stuffing mix (or make your own using my master mix!) will work JUST FINE!
For making as smaller meals for 1-2 people for storing in their freezer, make this dish into 2 freezer safe (and microwave safe) containers, so they can just go straight from freezer to microwave.
Chicken and Stuffing Casserole
Ingredients:
2 cups cooked and diced chicken or turkey
1 1/2 cups Chicken/Turkey Gravy or 1 can Cream of Chicken Soup
1(15 oz.) can green beans
1 pkg. (or make your own) Stuffing mix
Directions:
In a casserole dish mix together the chicken with the gravy (or cr. of chicken soup).
Drain the green beans and layer on top of Chicken Mixture.
Make stuffing according to package directions and layer on top of green beans.
To Heat and Eat right away:
Heat stuffing in 350° oven or in microwave till heated through and bubbly warm.
To Freeze for later:
Seal the freezer container with lid.
Label and mark heating instructions if needed
Store in freezer and use within 2 months.
To reheat from freezer:
This dish is precooked so it can be reheated either straight from frozen or thawed prior to heating. Heat either in microwave till heated through or in 350° Oven. Times will vary depending on individual ovens.
