My college student son made tonight's dinner for us and is an easy favorite for all of us!
Here is how Jason pumped up the flavor and had dinner ready in 10 minutes!
Jason's Tip: Slice open and toast the rolls under the broiler before starting the cheese steak filling, so they will be toasty and ready to go the moment the filling is done.
Kick'n Chicken Philly Cheese Steak Subs
Ingredients:
6 Sub rolls sliced in half lengthwise(We used asiago cheeses rolls)
2 cups diced rotisserie chicken
2 Tablespoons Olive Oil
1 green pepper diced
1 medium onion diced
2 cups shredded Mozzarella cheese (Set aside 1/2 cup for topping at end)
4 Tablespoons chicken broth (or water)
2 Tablespoons Kick'n Chicken Seasoning (By Weber Grill Brand)
Optional: 1 cup sliced fresh mushrooms
Directions:
In mixing bowl, pour chicken broth over shredded chicken to rehydrate the meat.
Mix in the Kick'n Chicken Seasoning.
Heat olive oil, green peppers, onions, and the optional mushrooms in a skillet over medium high heat, tell veggies are tender and caramelized in color.
Remove Veggies from skillet and set aside til later.
Add chicken to the skillet for 3-4 minutes till chicken is heated through.
Add in 1 1/2 cups of the cheese to the chicken, stirring to combine and melt cheese.
Remove from heat.
Place 1/2 cup approximately of chicken filling on each sub roll.
Top with sauteed green pepper/onion mixture
Sprinkle remaining cheese across top of sandwiches.
Serve immediately.
