Chicken Fajitas can be a quick, easy and delicious choice for dinner. It is perfect for one of those nights you don't want to spend a lot of time starting from scratch, but don't want fast food take out either.
I am sharing another great way to use store bought Rotisserie Chicken. Either using the leftovers from a previous meal, (like I am tonight) or deboning a whole chicken just for the purpose of creating quick chicken dinners.
Tonights left over chicken is being turned into a yummy fajita filling. I made a side of spicy Mexican Beans which my hubby put right into each fajita, while I ate mine on the side. I'll share that easy recipe very soon!
15 Minute Rotisserie Chicken Fajitas
Ingredients:
4-6 Soft tortillas warmed
1- 1 1/2 cups shredded, cooked chicken
1 medium green pepper cut into strips
1 medium red pepper cut into strips
1 medium onion diced
3 Tablespoons olive oil
1 packet of fajita seasoning
1/8 cup water or chicken broth
Directions:
Heat oil, peppers, and onions over in skillet over medium high heat. Stir frequently.
Cook 5-7 minutes till vegetables are tender. Reduce heat to medium low
Add chicken, fajita seasoning and water(or broth).
Stir to combine, and also occasionally 3-5 minutes till chicken mixture is hot and ready to serve.
Serve on warm tortillas with a side of Spanish rice and beans
