Jan's Tip: This recipe calls for pre-made Spanish Rice. I used 2 pouches of Knorr brand Spanish Rice packets to make this dish. I have my own Spanish Rice master mix recipe on this website, but was completely out when I went to go make it. So either one will do just fine!
Layers of creamy spicy rice, queso fresco cheese, cheddar -jack cheese, and diced green chiles just blend into a savory, creamy, cheesy side dish that equals to any entree it is served with .

Cheesy Spanish Rice Bake
Serves 6-8
Ingredients:
1/4 cup butter
1 medium onion diced
4 cups Cooked Spanish Rice (2 pouches Knorr brand)
2 cups sour cream
10 oz . queso fresco crumbled (divided in half)
1/2 teaspoon salt
1/8 teaspoon pepper
1 (4 oz) can diced green chiles drained
2 cups shredded cheddar-jack cheese blend (divided in half)
Directions:
- Preheat oven to 375° Lightly Grease 11" x 7" x 2" casserole dish
- Cook Spanish Rice in Microwave according to package directions or over stove top. Set aside.
- In Large Skillet, over medium heat, saute onions in butter until golden & tender, about 5 minutes.
- Remove from heat. Stir in hot rice, sour cream, half the queso fresco, salt and pepper. Mix well.
- Layer half of rice mixture (about 2 1/2 - 3 cups) in baking dish. top with half of green chiles,
- Sprinkle remaining queso fresco.over green chiles layer and then top with half of the shredded cheese
- Repeat Layers with Rice, chiles, and top with remaining shredded cheese.
- Bake uncovered 25 minutes till hot and bubbly.
