I added black beans to my recipe, to boost up the protein for myself, just a bit, you will find some recipes with just the shrimp only. I simply love the addition of the beans and will always keep adding them to the dish.
I also insist on using yellow rice with this dish. Not only is the pop of color just spectacular, the flavor of the yellow rice is just a fantastic complement to the shrimp. They just go together!

Shrimp Veracruz
Ingredients
- 2 teaspoons Olive Oil
- 1 lb. Med. Shrimp uncooked, peeled and deveined
- 2 shallots finely chopped
- 2 teaspoons fresh orange zest, (orange part only)
- 1/2 teaspoon dried thyme
- 1 (14 1/2 ) oz can diced tomatoes w/ green chiles or fire roasted tomatoes (for mild)
- 1 (14 1/2 ) oz can black beans drained
- 2 Tablespoons Fresh lime juice
- 1/4 teaspoon coarse salt to taste
- 1 packet yellow rice cooked
Instructions
Heat oil in large nonstick skillet over medium-high heat.Stirring frequently, cook shrimp, shallots, orange zest and thyme for 1 minute.Stir in tomatoes. Stir occasionally, cook about 5 minutes or until shrimp are opaque.Gently fold in black beans, then sprinkle with lime juice and salt.Serve immediately over cooked rice.
