Apple Cobbler French Toast Casserole

I've taken my classic Freezer Meal French Toast Casserole and completely turned it into an instant Autumn Fair Grand Champion Winner! I promise, you make this for a family gathering, or potluck and you won't bring home any left overs!

The scents of  apples, cinnamon, and the Brown Sugar Oatmeal Cobbler Topping all baking, will fill your home with  such a divine aroma, that your family will be drawn to the table!

Jan's Tips:
Milk Substitutions:  You can easily use any combination of milk products, including almond or soy type milks. It may slightly change the taste or texture some, but not by much. A small price to pay if milk choices are something that is important to you! I recently had to make a change to Soy milk for health reasons.  Today I went ahead and tried it in today's recipe. It did great! 

Time: You should let this Soak Overnight before baking, but in a pinch you can  bake this earlier, by letting it soak in the fridge for at least several hours. It's not as Ideal, but you can do it.  You can premake and freeze the egg/milk & bread mixture in a freezer bag or container and then thaw in refrigerator overnight prior to baking, as well. Then proceed with mixing in apples, and topping 

Apples: Choose a good, crisp & firm apple to bake with. I used  organic Honey Crisp Apples sent to me by Rainier Fruit Company, and were PERFECT for this recipe!

Apple Cobbler French Toast Casserole
Overnight Apple Cinnamon French Toast Casserole with a Brown Sugar Oatmeal Cobbler Crumble Topping.
Ingredients:

  • 12 slices thick, quality bread, cut into bite sized cubes
  • Large Honey Crisp Apples , peeled, cored & chopped, sprinkled w/ lemon juice
  • 1 1/2 cups milk
  • 1 1/2 cups cream, half & half, or evaporated milk
  • 6 eggs beaten (or egg substitute)
  • 1 teaspoon cinnamon
  • 1 teaspoon Vanilla
Topping:
  • 1 stick butter, softened
  • 1 cup brown sugar
  • 1/2 cup Steel Cut Oats
  • 2 Tablespoons Maple Syrup
Instructions:

Spray 9 x 13 baking dish with non stick cooking spray. place cubed bread in pan.Add chopped apples to bread, mixing throughout.In separate bowl, whip eggs till well blended. Whisk in Milk, cream, vanilla & cinnamon. Pour Egg Mixture over bread & apples making sure bread is well covered. Cover egg & bread mixture and store in refrigerator overnight.For topping, combine butter, brown sugar, oats, and maple syrup, till well blended. Sprinkle i small clumps evenly over top of apple french toast casserole. Bake in 350 degree oven for 45-50 minutes, till center is cooked through. Serve Warm with Syrup.
Yield: 12- 15 servings
